Weekly Meal Plan: Heavenly Vodka Ravioli & More

I found so many new holy grail recipes this week that I'll be adding to my arsenal. Comfort food for carnivores, vegeteriens, and vegans! You're not gonna want to miss this.


MONDAY: POLENTA FRIES & CHILLI

I followed this recipe from Tastemade, but you can easily make it vegan or find a specifically vegan recipe for polenta fries. I had some leftover chili that I wanted to use, and I was intrigued in trying polenta since I haven't found cornmeal in Ireland. I will say that I wasn't a huge fan of the texture, but I'm going to try it again in the future with smaller (more shoestring) fries. The taste was fine! Just didn't love the texture. If you've cooked with polenta before, let me know any tips & tricks you've figured out.

TUESDAY: BAKED ZITI

This recipe marked the first time Killian ever packed leftovers for lunch. Usually he gets something from the canteen because he hates carrying food to work on public transport. But he loves this recipe so much that he packed it into work the next day! It's pretty easy to make and tastes just as good reheated.

WEDNESDAY: CHORIZO PRAWN SKEWERS

I've been wanting to try this skewer recipe for quite a while because Killian loves both chorizo and prawns! It goes with a cilantro dipping sauce for a fresh zing. The seafood counter at my local grocery store has really nice fresh options with different seasonings prepped so making these was super easy for me. I took pre-seasoned prawns and skewered them around sliced chorizo. The baking time was quick since prawns don't take long to cook, so I just whipped up the sauce while they were in the oven and wham bam it was done! These would make a nice appetizer as well if you were having guests over, but we just had ours with a salad.

THURSDAY: VODKA RAVIOLI

This recipe killed it. I don't often cook with alcohol, but when I do it's nearly always been beer or wine. So it was fun to break out the vodka for this super decadent, creamy ravioli. I could eat this all day every day. Long term my body may not like it but hey, sometimes you have to make sacrifices for the better things in life. Whenever I want to be indulgent, this will be my new go-to over literally anything else.

FRIDAY: SLOW COOKER BEEF TACOS

I'm a sucker for beef that's been slow cooked. It just falls apart and is so freaking good. I wanted to try it in this taco recipe and I ended up finding my new fave way to do beef in the crock pot. It came out so flavourful and moist and the texture was on point. I ate like a third of the meat before I could even convince myself to put any of it in a tortilla!

I promise you, this beef taco will melt in your mouth. 

SATURDAY: ARUGULA PESTO PEACH FLATBREADS

Okay okay, so this recipe was yummy. But that's not why I'm raving about it. The reason I am so excited I found this page was because of the recipe for arugula pesto. OH MY DROOL. The flatbread was incredibly fast and easy to make, especially since I didn't grill my peaches. I was a little worried about making the pesto in my magic bullet because I don't have a food processor. But it actually got really smooth and creamy so that was a nice surprise! I'm going to be making the pesto again and putting it on a pasta dish. I was licking the spatula!

SUNDAY: GOUDA MUSHROOM GRILLED CHEESE

Grilled cheese will never get old. But you can kick it up a notch with this recipe. It comes with yummy cheese suggestions and roasted veggies to add texture and flavour to the basic grilled cheese. I used a cheese that was closer to a swiss and it came out really yummy. Great way to end the week!
