What I Ate This Week: 7-11 September

MONDAY: Almond Crusted Dijon Chicken

Okay, only Monday and this was already my fave recipe of the week! Healthy, and to die for. This whole recipe was quick, easy, and simple. But SO TASTY! I'm not a huge fan of dijon mustard, but this sauce was very mild. Killian doesn't love dijon either, but we were both loving the sauce. The two changes I made to this recipe: I used coconut oil to cook the chicken in, and I used straight up finely ground almonds. I will definitely be making this again in the near future.

TUESDAY: Blue Cheese Steak Salad

I actually really enjoyed this recipe. I omitted the bacon and the artichokes, and kept all the rest of the goodness! I also added some sunflower seeds to give it some more texture. It was super fast to make and super duper yummy. Especially the dressing. Filling and not too bad for you!

WEDNESDAY: Double Crunch Pork Chops

We had some pork chops in the freezer to use up so I went with this recipe to try out. But actually, I just used it as inspiration because we didn't have a lot of the ingredients on hand. I did, however, use the recipe for the sauce, and that was pretty good. I don't know that I'd do the double dip on the flour again, though, or at least not do the double dip at a medium heat because the "crispy" bits were falling off when I turned the pork to cook on the other side. Something I'd keep in mind maybe for a chicken in the future. Perhaps something like Monday's dinner?

THURSDAY: Avocado Caprese Wraps

This recipe goes back to the basics. It's light. It's yummy. It requires no heat (can you say perfect for the summer?!) And it's relatively healthy. PLUS it's ultra-fast. My suggestions: use a bigger tortilla, so that you can wrap it burrito-style to keep all the goodies inside, and use a wheat tortilla to make it healthier. Will definitely be making this again!

FRIDAY: Beef & Broccoli

On Friday I went back to a classic: Beef and broccoli. To make it a bit healthier, I didn't serve it over rice. And I added in some carrots and onion. It was still really filling, and other than the soy sauce, not too unhealthy!


We spent the weekend in Dublin, so we ate out the rest of the week. On to the next recipes!
